Sample Menus


Our chefs custom design each menu to the varying tastes, needs, and appetites of each individual client. Below are just three sample menus designed for three different clients with very different needs.


Vegetarian

Black Bean Tamale Pie
Seasoned black beans with green bell peppers, onions, tomato sauce and fresh corn meal crust.

Confetti Vegetable Curry
Sweet potatoes, zucchini, mushrooms, red bell pepper, corn and peas in a tangy tomato curry sauce. Served with cumin scented basmati rice.

Spinach Stuffed Lasagna Ruffles
Lasagna Noodles rolled with spinach and cheese and baked in a tomato sauce. Served with parmesan bread strips.

Orzo and Portobello Mushroom Casserole
Orzo with portobello and white mushrooms, sun-dried tomatoes and leeks topped with provolone and parmesan cheeses. Served with Tuscan bean and kale soup.

Udon Noodles with Roasted Eggplant and Sesame Soy Wasabi
Udon noodles and eggplant slices in a wasabi sauce topped with sesame seeds.


Low Carb

Broiled Swordfish with Cilantro-Lime Butter
Swordfish topped with a light, zesty citrus butter. (1.73g.)

Steak Roll-ups with Spinach and Bacon
Flank steak rolled-up and filled with spinach and bacon. Served with balsamic roasted green beans. (24.5g.)

Chicken Saltimbocca
Sautéed chicken breasts topped with prosciutto and provolone and covered with a mushroom sage sauce. Served with vegetables melange. (20.4g.)

Ginger Beef Stir-Fry
Marinated stir-fried strips of beef in a ginger-soy sauce. Served with sesame snow peas (10.88g.)

Ham and Fontina Frittata
A crustless pie filled with ham, eggs and fontina cheese. Finish with cappuccino granita (4g.)


Family Friendly

Creamy Chicken Pot Pie
Chicken with red onions, carrots, mushrooms, celery and peas in a fresh rosemary sherry cream sauce topped with a dill crust.

Fresh Fish Fillet en Papillote with Julienne Vegetables
Fresh fish fillets in a parchment paper pouch with finely sliced fennel, carrots and zucchini. Served with baked asparagus parmesan.

Crab Stuffed Chicken
Chicken breasts stuffed with a crabmeat filling and served in a white wine cream sauce topped with Swiss cheese. Served with roasted potato fans.

Baked Ziti & Italian Sausage Casserole
A hardy casserole layered with Italian sausage, pasta and cheese.

Chicken Enchiladas Suizas
Rolled flour tortillas filled with chicken, cheese and sour cream topped with a jalapeno tomatillo sauce, cheese, cilantro and sour cream. Served with Mexican rice
